I watch Japanesse Drama n the Chef cook this soup so i tried to cook it by myself.
French onion soup (French: soupe à l’oignon [sup a lɔɲɔ̃]) is a type of soup usually based on meat stock and onions, and often served gratinéed with croutons and cheese on top or a large piece of bread. Although ancient in origin, the dish underwent a resurgence of popularity in the 1960s in the United States due to a greater interest in French cuisine. French onion soup is usually served as a starter.
Onion soups have been popular at least as far back as Roman times. Throughout history, they were seen as food for poor people, as onions were plentiful and easy to grow. The modern version of this soup originates in Paris, France in the 18th century, made from beef broth, and caramelized onions. It is often finished by being placed under a grill in a ramekin with croutons and Comté melted on top. The crouton on top is reminiscent of ancient soups (see history of soup).
Recipes for onion soup vary greatly:
Generally, recipes specify that the onions should be cooked slowly, becoming caramelized. Brandy or sherry is added at the end. The soup base is often topped with a slice of bread (a “croute” or “crouton”).
For the gratinéed version, the croute is topped with cheese and broiled or baked. First step is cook Amber Soup.
- Boil 2 1/2 lt Water in saucepan until boiling n add meat (chicken 200gr and beef 200gr), cook until cooked n add vegetables (2 carrot, 1raddish, 5 green onion, 3 celery, 1 Broccoli, 1 onion, all cut into pieces)2 ginger , 1/2 tbsp sugar, 1tsp pepper/balck ppr n salt for taste n cooked until smell so good then turnof the stove. let it cool n filter it, coz all veggies will blended.
Second step is make Onion caramel:
- Frying 5 garlic (minced) with sesame oil (2tbsp) until golden then add 5 onion (cut into pieces) with low heat n you must alwyas stir it until onion golden n caramel then turn off the stove. Blend it with veggies mixture in Amber soup until blended.
- Add it to Ambersoup water n stir it well, put into heatproof bowls then add quail’s egg in the middle then put the bread n pile on the cheese. Grill until melted. Alternatively, you can complete the toasts under the grill, then serve them on top.
