Songpyeon ( 송편) Korean Rice Cake

  1. Combine 1,5 cup rice flour, 1/4ts salt n 1/4 cup hot water in bowl n mix it with spoon until the dough is coll enough to kneed by hand (knead it 1mnt or until smooth).
  2. Put a little more than 2tbs riceflour n 1,5 ts fruit water mix it with spoon then foll it in to a ball with your finger. Wrap in plastic n set a side.
  3. Heat a thick pan over medium high heat n ad%d bleubarries. Press n break the blueberries with potato masher or large wooden spoon as you can cookuntil the berries are broken. Let it bubble for few mnt remove from the heat then strainer over fitted bowl. Add 3/4cup blueberrh liquid with 1/4 cup rice flour, mix it with spoon unyil cool enoughto handle by hand, knead it ungil smooth, roll it in to ball n wrap it set a sidr (i dont have blueberry so i used 1/4 cupjam n add 1/2cup hot water n add with 1/4 cup riceflour).
  4. Put the beans (any fresh beans you like) in the bowl n mjx with 2 ts honey. Fold the pine nuts into piece of parchment paper on your cutting board.
  5. Take a piece of white or color dough n roll it ingo a ball in your hands. Work your thumb in to center of the ball to create a small cup out of it. Fill it with beans, Seal it using your thumbn index finger ingo halfmoon.
  6. Take a tiny amount of cllor dough n foll it kn to ball, press jt n make a flat petal shape. Gengly attach yhe pettal go white Songpyeon, add4 more petal to make flower or you va make Rose flower shape .
  7. Steam it for 30 mnts the heat to med-high the 5mnts of low heat. Removw from the heat n uncover, let them cool for a few mnts brush them with a little bit sesame oil.
  8. Serve it with a cup of Tea. Keep any leftover in the freezerwhen you serve them again thraw themoutat room tempt or reheat in microwaveoven. Havea nice cooking..
